Our history
The building's first foundations were laid around 1865 and housed the Protestant Infant School. These are the grey stone walls seen in the basement.
From 1910 onwards, the building was supposedly used as a warehouse, a factory, and even an auto parts business.
In 1956, a fire destroyed part of the building. The eastern part of the building was partially rebuilt, which explains the different brickwork on the façade. It then became an office building until 2000.
In 1997, the Coutellier family acquired the building and converted it into a hotel a few years later. The Hôtel des Coutellier officially opened its doors on September 1, 2000.
In 2010, the Hôtel des Coutellier was awarded its 4th star, the culmination of several years' efforts to achieve the objective it had been aiming for since its opening.
Following the closure of the restaurant MOSS bistro belge (1988-2013), the hotel welcomed the restaurant Légende par la Tanière in its walls in June 2014, which then gained a Michelin Star in May 2025.
In 2020, for the first time in its history, the Hôtel des Coutellier had to close its doors for two months due to the COVID-19 pandemic.
In-between 2022 to 2025, major work is carried out on all the building's facades to bring back the brick to its natural red colour and restore the building to its former glory.
This whole chain of events, beginning in the late 19th century, has brought us to where we are today, proud and privileged to have in our hands such a beautiful jewel of Old Quebec.
